Honey-Dijon Potatoes

Products in this recipe: Whole Grain Mustard
  • 2 lb potatoes, skin on, cut into pieces
  • 4 Tbsp olive oil
  • 3 Tbsp Silver Spring Whole Grain Mustard
  • 2 Tbsp honey
  • 2 Tbsp chopped fresh rosemary, plus more for garnish
  • splash of sea salt

Heat oven to 425F. Wash potatoes. 

Place washed and cut potaotes in a large mixing bowl.

In a small bowl, whisk together oil, Silver Spring Whole Grain Mustard, honey, rosemary, and sea salt. Pour oer potatoes and massage glaze into potatoes with your hands.

Place coated potatoes on a baking sheet. cook for approx. 35 minues until potatoes have softened and taken on a roasted color.

Allow potatoes to cool before serving.
